Goya Champuru
Ingredients
1 container Firm Aloha Tofu
½ pound bitter melon
⅓ pound thinly sliced pork or Spam
2 eggs, beaten
2 tablespoons sesame oil
1 tablespoon Japanese sake
salt and pepper to taste
Cooking Directions
1. Drain tofu lightly and tear into bite-size pieces by hand.
2. Cut bitter melon in half lengthwise, scoop out the seeds, slice them thinly, sprinkle with salt and rub into bitter melon, and let it stand. When tender, rinse with water and drain.
3. Heat 1 tablespoon of sesame oil in a frying pan over medium heat, stir-fry tofu until golden brown, and season lightly with salt and pepper. Set aside.
4. Clean the frying pan with paper towel, heat the pan over medium heat, add 1 tablespoon of sesame oil, and stir-fry pork (or Spam) that has been cut into bite-size pieces until thoroughly cooked.
5. Add bitter melon and continue cooking, and once bitter melon turns bright green, add tofu and season to taste with salt, pepper and sake.
6. Then stir in the beaten eggs and quickly cook through.
Quick Tip
When you use Spam for this recipe, there is no need to add salt since Spam is high in salt. To kick it up a notch, add cracked black pepper.
