Okara Croquettes
(Holiday Special Tofu Recipe)
Ingredients
⅓ lb Aloha Tofu Okara
2 medium potatoes
2 small cans of tuna*
*(Separate the oil through a tea strainer and use it for another dish)
2 tablespoons milk
2 tablespoons mayonnaise
1 tablespoon soy sauce
2 tablespoons butter
6 tablespoons chopped onion
Salt and pepper
Flour
Beaten egg
Breadcrumbs
Oil for deep frying
1. Wash the potatoes with the skin on, make a slit in the middle with a knife, wrap them in plastic wrap while still wet, and cook in a microwave oven for 3 minutes until a bamboo skewer can be inserted easily.
While still hot, peel the potatoes and mash them in a bowl.
2. Place the chopped onion and butter in a heat-resistant cup and cook in a microwave oven for 1 minute.
3. Add onion, tuna, milk, okara, mayonnaise, soy sauce, salt and pepper to the potatoes and mix.
4. Divide into 8 equal portions, roll into balls, dip in flour, beaten egg and breadcrumbs, and fry in medium-heated oil until golden brown.
5. Serve with your favorite sauce.
